avocado salad bowl

I often come home and just eat whatever is available and quick to prepare since often, I need to rush back out to teach a class and I don’t like doing it on a completely empty stomach. Lack of time means that sometimes, my dinners includes some not very nutritious things!

I’ve been eating pretty poorly the past couple of weeks, and have experienced many sugar cravings (and have certainly indulged them!), so I wanted to turn over a new leaf with a healthier dinner choice.

This takes about 5 minutes to prepare and would also be great as a snack!

Recipe
1 ripe avocado
1 medium sized tomato
pepper to taste
coriander to taste
lemon juice to taste
1 whole-wheat pita, toasted

Directions
Slice avocado in half, remove the seed, scoop out avocado into a bowl. Mash it up! Cube a tomato, toss it in with avocado. Add pepper, coriander, lemon juice to taste (you can also add salt but I didn’t). Mix it up and serve with the pita! (I toasted my pita to make them crispy but I’m sure it still tastes delicious un-toasted).

Done! (My mom also made some chicken which I had so I added some protein to the meal).

P.S. This makes enough for 2-3 servings (I had some for breakfast this morning).
